Special soup in a small cup

Special soup in a small cup

With every Chuka Soba (shio or shoyu), we serve a small cup of special soup just before your bowl arrives.

The special soup is made with plenty of shellfish and vegetables, extracting only the umami from the ingredients. It contains different umami compounds from the chuka soba broth, so combining the two creates an “umami synergy.”

  1. First, drink the special soup in the small cup.
  2. Then enjoy your chuka soba — it will taste even better.

This is only our recommendation. There are no rules, so please enjoy your meal however you like.

No additives, no MSG

Our chuka soba contains no additives and no chemical seasonings (MSG). Enjoy the natural umami of glutamic, inosinic, guanylic and succinic acids from natural ingredients.

The shop front, lit by string lights

A ramen shop that feels like a café.

A white sign, a mustard-yellow entrance and warm string lights. Inside, a light wooden counter and clean, bright walls. Unusually for a ramen shop, about 40% of our guests are women. Feel free to drop in on your own.

Shock the world with ramen featuring noodles!

Our noodle room

We use wheat from many regions of Japan and make our noodles first, in the noodle room inside the shop. Then we choose the soup and the way to eat them to suit those noodles. We call this order Mugi-kei — “wheat style.”

From the owner

I love ramen so much that I travel to popular shops in and outside Aichi just to eat. That love gives me all kinds of inspiration for creating new noodles. Nothing makes me happier than seeing guests enjoy a bowl I have put everything into.

Oi-soba

Oi-soba is a small bowl of mazesoba (soupless, sauced noodles). Unlike kaedama (extra plain noodles), it is already seasoned, so it is delicious on its own. You can also add it to the soup left in your chuka soba.

The oi-soba noodles change from time to time: thin noodles with a crisp bite, flat noodles, green noodles made with spinach powder, and more.
